Is there a documented API for The RockRMS? If so, what does that API include?

The Rock.Client project includes all of the endpoint parameters for Rock. You can find that here.
Inside Rock itself under Security > Rest Controllers you'll find a list of endpoints.
There's also a really great video here on REST and OData that explains auth.

...And with the 7.0 release, you will find an "API Docs" page under the Administration | Power Tools area which you can also see on the pre-alpha demo server here: http://prealpha.rockrms.com/api/docs/index
